The Project: Mellow Fellow Gastropubs in Reno, NV and Truckee, CA

Mellow Fellow came to life on the shores of the iconic Lake Tahoe when the owner Ryan moved there to escape the hustle and bustle of his investment brokering career and take a bit of a break. He quickly found, or rather didn’t find, there were no craft beer bars in the area. A few years and plenty of suds later, the bar grew into multiple locations and added a restaurant element.

Food was simple at first, an outside grill and some locally made sausages. Then came a few grilled cheese sandwiches, then paninis, then mac ‘n cheese and so on until it was as much restaurant as it was bar. That’s when Ryan reached out to find a partner for the next step of revitalizing the menu and restaurant operations.

Chef Clint came on board with the team to re-write the rules of the kitchen and give it the boost needed to keep sales rising during a normally slow season. We created a scratch made menu that bridged the gap between the previous offerings and the direction the restaurant wanted to go so not to alienate existing customers. Sausage making done in house, CAB beef for the burgers and a few signature shareable plates quickly became popular with the growing crowd.

After a few adjustments, the addition of brunch service and a busy sports season (skiing in Truckee, baseball and soccer in Reno) it was time for another change. A new menu was rolled out offering up new dishes a bit further from the norm and designed to set the gastropub apart from others. What started out as a mid length contract did turn into a long term partnership and Chef Clint joining the ownership team.

The Client

Driven by great beer, co-piloted by tasty food and always finding a great time… Mellow Fellow is just what the name implies, a mellow place to hang out with long time friends and make new ones. Ryan goes out of his way to find the best brews around, and the menu is fun and different enough to please a foodie but familiar enough for anyone to enjoy.
